But I understand what you're saying. And yes, I am aware that some thing I cook or eat are inherently vegan. Of course I can take a vegetable and cook it and say I made a vegan dish, but to elevate it to the next level and with different added "vegan" ingredients takes time to learn and experience. I can learn to do it, I just haven taken the time to do so. Whenever I cook I always try to go for that elevated level of a dish, so that's why I said I wouldn't dare. :)
I often cook only rice and vegetables when I don't feel the need to defrost or marinade something or do the extra work. I also know from vegan colleagues that their only real struggle with nutrients is the lack of B12. But other than there shouldn't be a problem with such a diet.
