Well keep in mind, "vegan" just means something that did not involve harm to animals to produce. Most foods (and clothing, etc) is already vegan, without trying to be. Some of the foods you eat (and even meals you make) are vegan, or could easily be vegan simply by omitting/replacing one ingredient. When I went vegan at first all I did was cut out all animal products from my diet. I didn't start buying tofu or anything I didn't already like, I just increased levels of certain foods I already enjoyed, like peas, beans, and nuts. I didn't have to cut out eating well, or even junk food, so it wasn't hard. I just stopped buying/eating meat and dairy. That was 95% of the effort required. Aside from that, now I just don't buy leather, fur, and so on. If it harms a sentient being to create, I don't need it.

Diet tends to be the main change for most people, because we have slowly added more and more meat to our modern Western diets. In the past couple generations, many people ensure to eat some meat with every meal, which is amazing to me, because they often justify it by saying "I need the nutrients". It's sad but funny at the same time, because I have skipped the meat (and other animal products) from EVERY meal for a few years, and my nutritional health has only improved. I have family and friends who bring meat when they visit me, even if they will only be here for a few hours, because they can't fathom the idea of missing out on meat for that long. They truly believe they will get sick if they don't. The lack of understanding of nutrition is astounding! Absolutely no knowledge of what nutrients humans need and how we can get them. They won't take ten minutes to upgrade their knowledge forever, it's so sad.

But as for "vegan food", you must already eat fruit? That's vegan! Veggie platter and dip? As long as nobody added breastmilk to the dip, that's vegan. Bag of chips, vegan. Burritos (skip the meat) are vegan, same with stir fries. Noodles, rice dishes, pasta, all easily vegan by just not adding meat. Once you do that you realize the meat was just there... it wasn't really what made the dish good.

Meatloaf, you'll have to skip for now :P (Although there are very tasty and realistic alternatives to ground beef made from pea protein and coconut oil now!)

No pressure, just saying, you already eat vegan fairly often and don't realize it. You may not be a chef, or even able to cook complicated meals, but you can still eat things that aren't animals, and get all the nutrition you need, be healthy, not increase your grocery bill, reduce your impact on the environment, AND enjoy food.

But I'm not being pushy, and I think everybody should have the freedom to do as they choose. You did mention not being able to prepare vegan food, though... so that's my reply :)

Of course, your friends sound like really good cooks. Neither you nor I would be a culinary match for them! Sounds like I might enjoy what they make, too. Sneak me a little piece next time heheh.

But I understand what you're saying. And yes, I am aware that some thing I cook or eat are inherently vegan. Of course I can take a vegetable and cook it and say I made a vegan dish, but to elevate it to the next level and with different added "vegan" ingredients takes time to learn and experience. I can learn to do it, I just haven taken the time to do so. Whenever I cook I always try to go for that elevated level of a dish, so that's why I said I wouldn't dare. :)

I often cook only rice and vegetables when I don't feel the need to defrost or marinade something or do the extra work. I also know from vegan colleagues that their only real struggle with nutrients is the lack of B12. But other than there shouldn't be a problem with such a diet.

Very true, a good B complex vitamin daily is wise for most vegans. I also take a small bit of added iron every second day, because I don't eat as much spinach as I should! Leafy dark greens are pretty incredible for nutrition, but sometimes I don't feel like a rabbit :P
(For immune boost I also take vitamin C and D, and some zinc for fighting off viruses.)

Avocado has a bad rap (associated with annoying liberal soyboys for some reason), it's really an incredible source of proteins and fats. Everything you want and nothing you don't. I like it sliced on rice or quinoa, but it's gotta be just ripe enough and not too ripe! It's amazing we can get them all the way from South America and Mexico up to Canada and have them ready for the 3 or 4 days they're at their peak.
