Yu know I’ve never had it from a tin. But callaloo and cheese doesn’t sound too bad. I’d probably take out the tuna but it's a nice substitute for the saltfish. I love to have tuna by itself. I can imagine having the callaloo and cheese with some warm,toasted excelsior water crackers and some ginger tea. A nuff callaloo hold in the likkle tin man. I love the creativity. The omelette idea sounds good. When I looked on your plate, callaloo onigiri also came to mind.
