Brown Stewed Chicken with Potatoes and Ginger.
A typical Jamaican Sunday dinner consists of rice and peas (rice cooked in coconut milk with kidney beans or gungo peas), chicken, fish or some other type of protein. It’s usually served with a tossed or other kind of salad and paired with a refreshing drink.
Here, I changed it up a bit. I prepared brown stewed chicken and yellow rice. I used a bit of Jamaican curry for the color and added coconut milk. I sauteed the chicken in just a bit of oil so it could get brown.I added dices of irish potatoes, ginger to enhance the flavor and a little browning to enhance the color.
I served it with a fresh salad and slices of avocado.
